    Caviar Cream

    12 ounces cream cheese, well softened
    4 ounces red caviar
    2 1/2 tablespoons grated onion
    Salt
    White pepper

    In a bowl, combine cream cheese, red caviar, grated onion, salt and white pepper to taste. Force the mixture through a fine sieve into another bowl, and chill it, covered, for 30 minutes or until it is firm enough to hold its shape.

    Makes 2 cups.
